What to Do with Leftovers

Creative and Earth-friendly recipes using leftover ingredients from the week

Leftover Veggie Frittata

Ingredients (serves 2–3)

  • 4–5 eggs

  • 1 cup mixed leftover vegetables (e.g., roasted carrots, spinach, zucchini, bell peppers, potatoes)

  • 1/4 cup shredded cheese (optional)

  • 1 tbsp olive oil or butter

  • Salt and pepper to taste

  • Herbs (fresh or dried, optional)

Instructions

  1. Preheat oven to 180°C / 350°F (or use stovetop only).

  2. In a bowl, beat the eggs and season with salt, pepper, and herbs.

  3. Heat oil in an oven-safe skillet and add leftover veggies to warm them up.

  4. Pour the eggs over the veggies and cook on medium-low for 3–5 minutes.

  5. Sprinkle cheese on top (if using), then place the skillet in the oven for 10 minutes or until set.

  6. Slice and serve warm or cold.

“Clean Out the Fridge” Soup

Ingredients (serves 3–4):

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 tbsp oil

  • Any leftover veggies (e.g., mushrooms, broccoli stems, cabbage, squash)

  • 1 cup cooked grains or legumes (e.g., rice, lentils, beans)

  • 1.5 L water or vegetable broth

  • Salt, pepper, and herbs to taste

  • Optional: a spoon of tomato paste or a dash of soy sauce for extra flavor

Instructions:

  1. In a large pot, heat the oil and sauté the onion and garlic until fragrant.

  2. Add chopped leftover vegetables and cook for 5–10 minutes.

  3. Pour in water or broth and bring to a boil.

  4. Reduce heat and simmer for 15–20 minutes.

  5. Add cooked grains/legumes and seasonings. Simmer another 5 minutes.

  6. Serve hot with toast or crackers. Freeze leftovers for later!

Pumpkin Soup

Leftover Wraps or Tacos

Ingredients (makes 2–3 wraps):

  • 2–3 tortillas, pitas, or flatbreads

  • Leftover proteins (tofu, beans, roasted chickpeas, cooked meat)

  • Leftover roasted or raw veggies

  • Hummus, salsa, or yogurt sauce

  • Lettuce, spinach, or herbs (even slightly wilted ones work!)

  • Optional toppings: shredded cheese, seeds, pickles

Instructions:

  1. Warm your tortilla or flatbread in a pan.

  2. Layer with sauce (hummus or salsa), then add proteins and vegetables.

  3. Top with greens and any extras you like.

  4. Fold or roll up and enjoy immediately—or wrap it for later!
