Lithuanian Bulviniai Blynai (Potato Pancakes)

Ingredients (4 servings)

  • 4 medium potatoes, grated

  • 1 small onion, grated

  • 1–2 tbsp all-purpose flour (optional)

  • Salt and pepper to taste

  • Oil for frying (sunflower or rapeseed oil works well)

  • Unsweetened plant-based yogurt or applesauce to serve

Instructions

  1. Grate the potatoes and onion into a large bowl.

  2. Squeeze out excess liquid using a clean cloth or sieve.

  3. Add salt, pepper, and a bit of flour if the mixture is too wet.

  4. Heat oil in a pan over medium heat.

  5. Spoon small amounts of the mixture into the pan and flatten into pancakes.

  6. Fry each side for 3–4 minutes until golden and crispy.

  7. Serve hot with yogurt or applesauce.
